Thought I had a jar of lemon curd in the cupboard, but did not, so found this recipe - amazing.
I wanted a lemon curd filling for my son's birthday cake, and this was so highly rated (and I was so rushed), I decided to give it a try.
Amazing!!! I added three egg whites and then two more whole eggs and an additional 1/4 cup of sugar when it appeared it was not thickening up.
