Growing up near Aix-en-Provence, France long time restauranteur Gilles Brassant decided to pursue his dream of Cassis Bistro when moving to Calgary in 2008. After visiting France, New York City, San Francisco, Montreal, Quebec City and Vancouver Cassis Bistro remains one of my favourite All-Time!
