I visited the bakery after school and bought the chia bread. And it's surprisingly good! A good thing is that you can put the bread on a tray and pack it at the packing station, or you can bring your own box to reduce waste. You can also put your coffee and other drinks there in a reusable cup. Unfortunately, they don't have many options. In Ingolstadt there are two of them, one in the mentioned place and the other near the Sparkasse.

The Backwerk doesn't have a huge range of vegan options but does have some nice options if you're on the go and need something quick to snack on. Cheap prices.
