Avaliação da contribuiçãoA pleasant obsession, yes! This is precisely the key element to understand the philosophy and gastronomic proposal of this restaurant. An obsession with quality raw materials! This is what I am referring to. Let's go in order anyway. The place is beautiful, with a wonderful floor, perhaps it is a little chaotic when it is full, and today, a Saturday evening in the midst of Milan fashion week, it was. I would say impeccable service. Three of them managed to do a job that is normally handled by 5 people, without however lacking in professionalism, especially in the explanation of the dishes and the origin of the raw materials. The menu deserves a standing ovation because of how captivating it is! Not huge (a plus for me), but really well composed. My partner and I took 4 dishes each which turned out to be really good, at times excellent. I started with a Limousine beef tartare which thank goodness, or thanks to their skill, they left practically intact: just a pinch of ginger to give that extra liveliness, but otherwise it was just pure enjoyment of fantastic meat. I then continued with an egg cooked at low temperature (wonderful) on red turnip cream (perfect) with porcini mushroom crumble. The idea is brilliant and so is the execution, but I found the porcini mushrooms to have little bite. I am a fan of porcini mushrooms and unfortunately I am too familiar with those of the Tuscan-Emilian Apennines, and therefore all the Alpine cousins (with all due respect to the mushroom farmers of Valtellina, Trentino or other regions) for me are just makeshifts, always available on the market...but of inferior quality. Sublime Carnaroli rice with sour butter and red prawns. A dish to applaud, perhaps the best of the evening. To finish, I returned to an appetizer: excellent golden sweetbreads. I was able to taste an abundant handcrafted foies gras of excellent quality from my partner, a dish of very particular gnocchi with roast sauce and raw beef. Really well designed dish and even better made! The evening was enriched by an excellent pure Aglianico, chosen from an intelligent and well-constructed wine list, where, in my opinion, the expert hand of Fabio Scarpitti, a guru on the subject, stands out! Absolutely honest account, in fact I would say that the quality/price/location ratio is unique. Perhaps one of the best recorded in my food and wine tours. Really good.
