The Hichborn - Stockton Springs

This is excellent fine dining in the form of a multi-course meal. Expensive, but well worth it, since this as much an experience as it is a meal. The menu is prie fixe (with the option of wine pairings with each course), using mostly locally-sourced meat, seafood, and produce. There are often a couple little surprises from the chef that don't appear on the menu in the form of amuse bouches or gremolatas. The offerings vary depending on what's in season. The house is beautifully maintained, and each dining space has a wonderfully intimate ambiance. The wait staff is familiarized with each menu and can answer questions about each course confidently. The Hichborn can accommodate specific dietary needs provided they are given notice. Expect to spend a couple hours. This is NOT a drop-in restaurant. Make a reservation on their website and make sure to include any details like dietary needs, occasion, etc.

Hands down my favorite restaurant ever (and that says a lot! . The meal from start to finish was different and creative. The food was outstanding and the chef even came to stop by the table at the end of the service. Still dreaming about the maine haddock with apple butter. The servers were extremely attentive. The ambiance is dark and intimate. The menu allowed me to try new foods that push me out of my comfort zone. I highly recommend for a date night or special celebration!

My husband and I celebrated our first year anniversary in June 2023 here and had an exceptional and memorable dining experience. We added the wine pairing to our meal and highly recommend! We are pescatarian and the accommodations for our dietary preferences were greatly appreciated. This dinner was one for the books and a dining experience we will greatly treasure. Thank you!
