Nous avons passé une nuit au Château de Vault-de-Lugny. Probablement l’une des plus paisibles et luxueuses. Après l’entrée dans un magnifique château fort aux fortifications d’époque et l’accueil d’un personnel plus qu’aimable, nous découvrons de somptueuses chambres. Rideaux en velours, magnifiques tableaux, lit à baldaquin et j’en passe. Un silence quasi religieux règne dans le parc du château où l’on n’entend que le bruit des animaux (oies et paons en liberté . Côté cuisine, le chef Franco Bowanee maîtrise une cuisine de saison (issue pour beaucoup du potager du château savoureuse et parfaitement équilibrée. Quant à Karina Laval, son travail du sucré est remarquable (des desserts tout en légèreté et en parfaite harmonie avec le reste du menu . Le Valucien mérite amplement son étoile (voire une deuxième !

The menu we proposed was extremely unbalanced. two tiny appetizers, a tiny main course, followed by 3 very sweet unnecessary gloomy. we have starved and saturated with sugar. we expected some creativity, there were some, but there was no deep. in any of the courses that were served us. where were the complex aromes that should be experienced in a Michelin star restaurant? a restaurant that calculates customers 3 times the price of an average reasonable restaurant should not only be average. the worse of all courses was the tomatenkurs. introduce yourself to a court that was mainly made from a tireless tomato leaf that could be bought in a super market in januar. if the cook knew that the quality of the tomate was not on par, he should not put it on the menu.
